Osetra caviar has large to medium-size grains. It has a unique clean, crisp, "nutty" flavor and varies in color from golden yellow to dark brown. Many consider it the best tasting sturgeon caviar of all.

Traditionally, Osetra Caviar derrives from only two sturgeon Species, the Russian Sturgeon and the Persian Sturgeon wild in the Caspian Sea. Caspian Caviar has been known to be the highest possible grade of Caviar in the world.
