In the beginning of 19th century, the United States was the major producer of caviar in the world and produced a large percentage of the world's caviar supply. By the end of the nineteenth century, the United States was one of the largest producers of caviar in the world, processing more than 600 tons a year rivaling Caspian Sea Caviar. Still though, American Caviar wasn't dealt with and processed with the artisan technique and regard of the skilled Persians and Russians...until recently.
