Iranian fishermen consider catching the Beluga sturgeon a great success. Due to the immense size of the fish, Beluga also produces the largest eggs of all sturgeons and offers a massive amount of Caviar per catch. Its large pearls, fine butter taste and distinguished pop make Beluga caviar one of the most exquisite delicacies in the world.

The Beluga (huso huso) is the largest of all sturgeons (up to 6 meters/20 feet in length) and is the only carnivore amongst sturgeons. The Beluga has been known to weigh more than a ton, but unfortunately, because of aggressive modern fishing methods such a size seems extremely unlikely these days. At the beginning of the twentieth century the Beluga caviar accounted for 40 per cent of the sturgeon catch - in 2005, it was barely one per cent and unilaterally banned from imports within the US. Today, it is very rare to catch any Caspian Beluga, hence we offer our exquisite River Beluga Caviar
